GRILLED SWEET POTATO “BUN” SLIDERS

I know it’s only Monday, but hopefully you have some fun Labor Day plans in the works for the upcoming holiday weekend! If any of them include hosting or attending a BBQ, this Grilled Sweet Potato “Bun” Slider recipe would be fabulous addition to the menu. So much healthier than a regular burger and you’ll be amazed at how delicious the sweet potato “buns” are…trust…you will not be missing a thing!

These burgers are a serious “taste” of summer babes. Look how fresh and gorgeous all the produce is and I made sure to include lots of seasoning in the burgers. Microwaving the sweet potatoes a little before you grill them, cuts down on the cooking time and creates a much better “bun”…crispier on the outside and a little softer on the inside. With so much flavor in the meat + all the delicious veggies, I didn’t serve them with any mustard or ketchup or anything…you’ll have to see what you think, but I thought they were super tasty on their own! They are quick and easy to make too! I surprised even myself when I was putting them together…it was so fast.

Perfect gluten free alternative this weekend or anytime you are craving a burger. Eating healthier can be delicious and is definitely not about deprivation. When you shift your focus to seeing all the positive things that come from eating healthy food versus fixating on unhealthy food as what you “can’t have”; you notice how much more energy you have, how you don’t get bloated anymore after you eat, how much better your clothes fit and also how much more delicious healthy food tastes! Eating more plants and eating real food is so much a part of a healthy lifestyle…eat what you love and love what you eat babes! xo

GRILLED SWEET POTATO “BUN” SLIDERS

These Grilled Sweet Potato “Bun” Sliders are a fantastic gluten free alternative for your next BBQ or summer party! Delicious, healthy and super easy! xo
Ingredients
  • For the burgers:
  • 1 pound organic grass fed ground beef
  • 1 teaspoon sea salt
  • 1 teaspoon paprika
  • 1/2 teaspoon red pepper flakes
  • 2 garlic cloves, minced
  • For the buns:
  • 1 large sweet potato
  • 1 Tablespoon olive oil
  • Kosher salt, to taste
  • For the toppings:
  • Tomato. sliced
  • Avocado, mashed
  • Fresh spinach
Instructions
  1. Pre heat your grill on high.
  2. Wash the sweet potato and pierce it several times with a fork. Grab 3-4 paper towels. Soak them with water, then wring out the excess liquid. Wrap the sweet potato in the paper towel and place it in your microwave for 5 minutes. Cook it enough to soften just a bit, but not too much to where it gets mushy.
  3. Remove the sweet potato from the microwave. Allow it to cool. Then gently slice it into 1/2″ rounds for the “buns”.
  4. Brush each side of the sweet potato rounds with olive oil and season with salt. Set aside.
  5. Next, take all the burger ingredients and combine them in a large bowl. Mix until everything is combined. Separate the meat mixture into 8 sections. Form a small slider size patty with each section. Brush each side of the patties lightly with olive oil.
  6. Once the grill is pre heated, turn it down to medium. Then place the sweet potato “buns” and burgers directly on the grill. Cook for 4 minutes. Flip and cook an additional 3-4 minutes or until they reach the desired level of done-ness. Remove from grill and cover to keep warm.
  7. To serve, top a sweet potato “bun” with mashed avocado, fresh spinach, a slice of tomato, one slider and one more sweet potato round.
  8. Enjoy!

Last Sunday I hosted a Virtual Meal Prep Cooking Class for my clients. Together we prepped lots of healthy stuff to support us through a 5 Day Plant Based Cleanse (meaning 5 days with no dairy, animal protein, added sugar or processed carbs).⁠

The feedback I got from everyone was amazing! It is crazy what a difference just a little bit of meal prep can make. Having your fridge stocked with healthy things prepped to be more "grab and go" really does make it is so much easier to eat healthy all week!⁠

🍠Sweet Potato Toasts - something as simple as sweet potatoes already roasted makes it so easy to put together this amazing meal in minutes.⁠

🥑BbE Frozen Green Avocado Smoothie Packets - I didn't even know how fabulous this would be! Freezing the dates brings out the sweetness even more and being able to just add liquid to a blender and throw these frozen packets in saved so much time. ⁠

🥬Spicy Asian Salmon Salad - we did have Sunday as our last night for animal protein and this salad was super easy and so freaking good!⁠

In addition to those recipes, we prepped Roasted Sweet Potatoes and Veggies for a Veggie Hash. Some of the veggies were also prepped to go on a salad for the week. We made the dressings for both salads and had bags of precut red cabbage and shredded carrots.⁠

I've been having a lot of conversations with clien I've been having a lot of conversations with clients about how it feels to step out of a will power mindset and instead, approach your healthy lifestyle changes from a place of AWARENESS. 🌟 I think it's a really impactful shift, so wanted to share some of the ideas with you! ⁠

What comes to mind when you think of changing unhealthy habits? Resisting certain foods? Forcing yourself to go to the gym? Restricting alcohol? Giving up what you want for what you HAVE to do???

All of these beliefs have an energy of requiring will power, discipline and self control to “improve yourself”. This mindset takes away your power and gives it all to whatever it is you are working ⁠to change (ie. the food, the alcohol, the activity).

What if rather than restricting or resisting, you started paying attention to how certain foods, activities and things make you feel? Shifting your focus to “knowing yourself" vs. “controlling yourself” gives all of the power back to you! 👊🏽

Empower yourself by deciding what you put in your body and how you spend your time based on how it makes you feel. Tune in to your body’s signals and reactions and be aware of how working out, eating healthy, getting enough sleep, not drinking, etc. feels. Knowing yourself and your body makes it so much easier to choose the things that will nourish you mind, body, soul!🙏🏽
