If you follow the BbE Weekly Meal Plan, you already know how much I love salmon. Most weeks, I include at least one salmon recipe. In our house my husband refers to it as “Salmon Sunday” because somehow we have gotten into the routine of cooking salmon every Sunday. It works out perfectly when we go to the store on Saturday or Sunday, the fish is really fresh and it feels so good starting the week off with a light, healthy meal!
I decided to put together some of my favorite salmon recipes to share with you! All of them are super healthy, so delicious and easy (I promise). I love the variety of flavors and vegetables…hopefully you will too! xo
This Sicilian Style Salmon with Garlic Broccoli and Tomatoes from Half Baked Harvest is an absolute “regular” in our house. Not only is it delicious, it is super easy and great for either Sunday night dinner or a quick weeknight meal. If you love one pan meals, you will definitely want to try this one!
When I stumbled across this Honey Harissa Salad from Goop, I was so excited! If you haven’t cooked with Harissa, this recipe is a fabulous way to give it a try! It makes such a delicious marinade for the salmon and is perfectly paired with the arugula, cucumber and olives!
This Asian Honey Glazed Salmon with Green Beans from The Endless Meal is another great one pan/skillet salmon recipe that works beautifully for a Sunday night dinner, but is also quick enough for a weeknight meal. The flavor of the sauce is what really stands out for me! So much tastier than other “asian” salmon recipes I’ve tried. The green beans are a nice addition as well! Let them char a little in the pan…so yummy!
Another recipe that was a big hit at our house and on the meal plan is this Baked Salmon with Roasted Red Pepper Sauce from Cotter Crunch. I used full fat coconut cream in place of the heavy cream and it turned out amazing! If you love romesco sauce, you are going to want to try this one for sure!
And finally, the Sun Dried Tomato Lemon Baked Salmon with Asparagus from Will Cook for Smiles. I keep a printed copy of this salmon recipe in our kitchen as it has become one of our “go-to’s”. I love how easily it comes together and how light and simple the flavors are. It’s awesome to be able to take just a few ingredients and put together a healthy, delicious meal in under 30 mins.
