We have been playing around with several different meatball recipes, trying to come up with a completely grain free and “flourless” version that bakes well and of course…tastes amazing! After a few attempts and a little tweaking…tada…fabulous-ness achieved! Love the flavor of the fresh herbs, garlic and onion and these really do bake up so nicely. Perfect served over spaghetti squash or wilted greens. This is an awesome recipe for your weekly food prep as well! GRAIN FREE ITALIAN MEATBALLS
1 pound organic grass fed beef
1 egg white, beaten
1/4 cup onion, chopped
2 garlic cloves, minced
2 Tablespoons fresh basil, chopped
2 Tablespoons fresh parsley, chopped
1/2 teaspoon sea salt
1 1/2 teaspoons Italian seasoning
1/4 teaspoon red pepper flakes
1/4 teaspoon paprika
Preheat oven to 400 degrees. Line a baking sheet with parchment paper. Mix all of the ingredients together in a large bowl. Form the mixture into 1 1/2 – 2 inch meatballs. Place on the baking sheet and bake for 20 – 25 minutes, turning over at halfway through baking time.
Remove from oven and serve warm or store.
