“I first started working out with Emilee in September of 2012. With my wedding only three months away I had a lot of work to do. I weighed 153 pounds and really wanted to hit my goal weight of 145. Never being under 150 pounds it felt almost impossible. I had been working out on my own for over a year, and was at a stand still with my weight. With Emilee’s help and dedication I actually weighed 144.6 on the day I left for my destination wedding.
Not only did Emilee help me hit my goal, she also made a nutrition plan that worked for my body. She helped me figure out how many calories I could eat a day. I was never hungry, and I never felt like I was not eating enough. Working out with her was also a pleasure, and the hour went by in what seemed like 10 minutes. With Emilee I got to laugh and feel like I was hanging out with a girl friend while I was getting the body I always wanted. Emilee helped me change my body and my life.”
1 cup balsamic vinegar
4 chicken breasts, pounded to an even thickness
1 Tbsp extra virgin olive oil
Sea salt & pepper to taste
2 Tbsp fresh parmesan cheese
4 cups of baby spinach
1/2 cup pre-made bruschetta topping
Homemade Bruschetta topping:
3 roma tomatoes, diced
1/4 c. packed fresh basil, cut into thin strips
2 garlic cloves, minced
Preheat the oven to broil.
If making your own bruschetta topping, combine all ingredients and set aside.
Pour balsamic vinegar into a small saucepan and bring to a boil. Turn heat down to medium and allow to simmer. Reduce until vinegar is thick enough to coat a spoon, about 20 minutes. (Vinegar will continue to thicken while cooling.) Set aside to cool.
Season chicken breasts with salt and pepper on both sides. Brush a large skillet over medium-high heat with olive oil then add chicken breasts and cook for 4-5 minutes a side, or until cooked thoroughly.
Transfer chicken to a foil-lined, nonstick-sprayed baking sheet then top with 2 Tablespoons bruschetta mixture and parmesan cheese. Broil until cheese has melted.
In a skillet, lightly saute spinach in until wilted.
Remove chicken breasts and serve over wilted spinach. Drizzle with the balsamic vinegar reduction.

Here is my most recent interview with Shaul Turner and Fox 31 News Denver. She has been so awesome to work with! Love that she is helping get the message out about how important exercise and good nutrition are. For this segment, she was asking me about the beauty benefits of exercise. You all know that if you look pretty at the end of a workout, you didn’t work hard enough right? ;) But, how amazing is it that exercise is one of the best things you can do to keep your hair long and shiny, your nails strong and your skin tight, firm and glowing. When you workout, you stimulate the flow of blood to your hair, skin and nails. By increasing blood flow, exercise helps nourish your cells and keep them vital. Working out also helps remove toxins from your body, getting rid of waste and giving you a healthy glow!
So excited to see what happens! Women’s Health magazine held an audition for “The Next Fitness Star”. It would be such an amazing experience…absolutely a fitness dream come true. ;) Think good thoughts and send out positive vibes! They will contact the 5 finalists in the beginning of March!
