By cooking it overnight, you aren’t stuck in the kitchen waiting. Really yummy ! Clean eating breakfast at it’s best!!!
CROCK POT PUMPKIN PIE STEEL CUT OATMEAL
1 cup steel cut oats
1 (15 oz) can pumpkin puree
3 cups unsweetened coconut milk or almond milk
1 Tbsp pumpkin pie spice
1/2 tsp salt
1/3 cup brown sugar
2 tsp vanilla extract
Combine all ingredients in a slow cooker (a crock pot liner helps with clean up, otherwise the oats may stick to the sides). Turn crock pot to low and cook for 8-9 hours. Stir before serving.
